-Tilapia 3 to 5
-2 teaspoons Tee’s Taste Organic Spice Mix (Smix)
– 8 garlic cloves
– ½ cup chopped basil
-1 inch ginger
– 3 to 4 bouillon cubes (Maggi) or to taste
– 2 cups peanut oil
– 1 cup of celery
– 1 medium onion
-1 cup leeks
-1 medium green pepper
– 4 to 5 hot Jamaica or habanero peppers (optional)
– Salt to taste
Method:
1. Clean your fish and cut 5 to 6 diagonal cuts into fish right to the bone. On each side. side of the fish, all the way right th
2. Put all spices in a blender and blend with the peanut oil including bullion cubes and salt to taste. Do not add water.
3. Put fish in a large ziploc bag and pour marinade over the fish seal and shake bag until marinate is well coasted on both sides of fish. Put in refrigerator and let it marinate for 24hours.
4. Preheat oven at 350 then switch to boil. Use broil to retain moisture in fish.
5. Place fish on an oven pan and broil each side for about 5 to 10 minutes on medium heat. Baste while grilling with leftover marinade to retain moisture.
6. When fish is ready peel sweet potatoes and cut in thin sizes. You can either sprinkle a little salt or marinate with same mixture you used for your fish.
7. Bake on medium for 20 to 30 minutes or until cooked.
8. Serve fish with baked sweet potatoes, onion sauteed spinach for fiber and hot pepper sauce.
