Ndole Bitter Leaf (peanut)
Ingredients
10 oz. bitter leave
4 cups peanut
4 habanero fresh peppers
3-bouillon cube
1/4 cup crayfish
1teaspoon ground ginger
1 teaspoon Garlic
1pound meat of choice
1 small smoke fish (optional)
1 onion
1 medium green pepper (optional)
Salt to taste
2 cups canola oil
1″ Limestone
Method
Wash slice and bring meat to boil spice with bouillon cube pepper, onion to taste. Do not add water as the meat releases its own water to cook.
Wash slice bitter leaves, blanch in hot water with a little limestone and drain in a colander and squeeze
Heat oil
Add peanuts and allow to cook for about 30 to 40 minutes
Add all ground spices and crayfish allow to simmer for about 5mins
Add bitter leaves or, meat and fish allow to cook for a couple of minutes.
Serves with boiled green plantains.
