2 cups all purpose flour (whole wheat flour healthier alternative)
½ cup coconut flour
4 eggs
1½ teaspoon baking soda
1½ teaspoon baking powder
¾ cup brown sugar
2 regular size bananas
1½ tablespoon cinnamon
1 tablespoon nutmeg
1 tablespoon vanilla extract
4 to 5 shredded carrots (about 3 cups)
3½ unsalted butter sticks or 1 to 2 cups coconut oil
1 cup crushed walnuts or almonds (optional)
1 cup shredded fresh coconut (optional)
Method
1.Preheat oven to 350 degrees.
2.Butter your cake pan and put it to the side.
3.Sift flour, baking soda, baking powder, and cinnamon together in a bowl.
4.In bowl, whisk together melted butter, sugar, eggs, and vanilla and mashed banana. Then mix in the sifted flour mixture into the batter.
5.Add in the shredded carrots, walnuts, shredded coconut, and mix together until incorporated.
6.Pour the batter into the cake pan and place the pan in the middle rack of the oven.
7.Bake for about 40 to 45min until the edges pull away from the sides of the pan, and a toothpick inserted in the center comes out clean.
